Worldwide, 64 countries require fortification of one or more types of flour with at least either iron or folic acid. The flour produced in these countries, plus the flour that is fortified voluntarily, represents 30 percent of the world’s wheat flour produced in industrialized mills.
Flour is commonly fortified with iron, zinc, folic acid and other B vitamins such as thiamin, riboflavin, niacin, and vitamin B12. Vitamin A and vitamin D can also be added to flour.
